Slovenia - Kremna Rezina
This deliciously creamy pastry originates from Lake Bled in Slovenia. It's a pretty straight forward recipe but does require quite a few steps and some forethought as it needs time to set in the fridge. Similar pastries are eaten around the world. It particularly reminds me of a vanilla slice in the UK, which is one of my favourites. Two layers of crisp, buttery pastry filled with a set vanilla custard and fresh cream.

I’m one of those crazy people that will spend three days making croissants at home. I just adore every aspect of it. The making, shaping, baking and of course, eating. I find baking so therapeutic and spending days labouring away on some croissant dough is my idea of heaven. I promise that all the effort is worth it when you take that first bite of crisp, buttery, flaky pastry.
Rhubarb Raspberry Compote & Lemon Frangipane Meringue Tart
I always jump at the chance to use some Rhubarb. It’s one of my favourite ingredients and try to fit it into everything when its in season. The tartness from the Rhubarb marries really well with the sweet Raspberries in this tart. Layer in some nutty Almond Frangipane and its a perfect match. Little do you know its all sitting under that beautiful glossy meringue top.

Crisp choux buns filled with a silky smooth caramel sauce & a decadent whipped chocolate ganache. Both the caramel & the ganache are laden with Irish Cream in celebration of St Paddy's Day honestly, SO GOOD!

Greece - Portokalopita
A delicious alternative to your average cake, packed full of orange flavour and really easy to make. You start out by tearing the Filo Pastry and leaving it to dry for a few hours before soaking it in custard. Once its baked, drench the entire cake in cinnamon infused orange syrup. Heaven!
