Ginger White Chocolate & Rye Cookies
I love that you bite into these cookies and hit a melty morsel of gingery white chocolate just sitting amongst an unassuming cookie dough. I think the addition of dark rye flour contrasts really well against the sweetness from the chocolate and gives these sweets a bit more body.
Marble Mint Choc Chip Mallows
I love mint choc chip and I love a melty sweet marshmallow bobbing around in my hot chocolate. So I decided to mash the two together with these rippled peppermint marshmallows. A third of the peppermint marshmallow gets mixed with melted dark chocolate and cocoa powder, while the rest gets crushed candy canes folded through. These two then get gently marbled together before being left to set overnight.
Black Forest Brownies
I've wanted to make a decadent tray of brownies for weeks. After having a look back through my reels and seeing my black forest cake, I knew that was the flavour I wanted to go with.
I'm still yet to find my 'perfect' brownie recipe; but I decided to try Baran Bakeries recipe and it didn't disappoint. They're the perfect mixture of cakey and fudgy, and probably one of the easiest brownie recipes I've made. Such a satisfying bake.
I then whipped up some mascarpone cream and topped it with vibrant cherry compote & chocolate.

Crinkle Cut Crisp & Honeycomb Choc Chip Cookies
The wholesome cookie has had a salty makeover. I love a salty sweet treat and I loved the idea of honeycomb and crunchy, salty crinkle cut crisps together. The perfect conveyor for this? A chocolate chip cookie. These are soft in the middle and crisp around the edge. The honeycomb becomes chewy as it bakes in the oven and the crisps stay salty and crunchy. Pair all of that with some gooey dark chocolate and you have a bloody good cookie.
Millionaires Shortbread
These are a real nostalgic treat for me. I’ve eaten them growing up at birthday parties, alongside a warming coffee as an adult and now I’m showing you how to make them at home! As with most bakes, homemade just tastes better. Using good quality ingredients, especially chocolate, make a world of difference here. Although these do have quite a few components to build up the layers, they’re all quite easy recipes to follow. So knock up a batch for your next coffee date and enjoy!
Slovenia - Kremna Rezina
This deliciously creamy pastry originates from Lake Bled in Slovenia. It's a pretty straight forward recipe but does require quite a few steps and some forethought as it needs time to set in the fridge. Similar pastries are eaten around the world. It particularly reminds me of a vanilla slice in the UK, which is one of my favourites. Two layers of crisp, buttery pastry filled with a set vanilla custard and fresh cream.
