
Strawberry, Lemon, White Chocolate Cookies
Summer in a cookie. This gorgeous lemon oat cookie is swirled with fresh strawberry compote, scooped and rolled in a zesty lemon sugar. Once baked, they’re gooey in the middle and crisp on the edges with pockets of creamy melted white chocolate.

A Big Fat Focaccia Sandwich
This focaccia recipe is my favourite and it is so easy to make, there’s hardly any hands on time. No kneading required either. It’s a 90% hydration dough which means it’s light and soft. Apart from the delicious focaccia, the other star of the show is the pistachio pesto. It’s punchy, garlicy and so tasty. Any leftover is perfect for pesto pasta too.

This beautiful loaf cake is speckled with poppyseeds and packed with lemon. You start by rubbing lemon zest into the caster sugar of the sponge and leaving it overnight to let the oils release into the sugar. The baked cake is then drenched in a lemon soak before being finished in a tangy lemon icing.

Apricot Croissant French Toast Bake
This croissant french toast bake is my ultimate meal prep for a delicious breakfast with minimal work. You prepare it the night before and bake it in the morning. This is always going to be a win for my busy mum days. It’s a real crowd pleaser if you have friends or family staying and an easy way to feed a bigger crowd. It’s crisp on top while staying soft and custardy in the middle. The apricot conserve sits in little fruity pockets and caramelises on the edges.

Simple No-Knead Bread
I love having fresh bread in the house but being a mum to a little girl means I don’t have much time to spare.
