There’s something so satisfying and pleasing about a clean slice of custard tart. This tart looks simple but packs in a lot of technique and flavour. None of the flavours overpower each other in this, they just dance along together in harmony encased in a silky custard.

Hazelnut Frangipane Mince Pies
I think these may become a yearly bake for me. Golden, crisp, flaky pastry with nutty hazelnuts and a punchy, perfectly spiced mince meat. Let’s not forget the obligatory sprinkling of little crunchy demerara sugar too.

Flaky Eccles Cakes
I highly recommend making rough puff pastry for these Eccles Cakes, it makes such a difference. Although, if you’re short on time, you can always use shop-bought puff pastry. I like to make a bit of a wetter filling and leave it overnight to really mull all the flavours together and plump up the dried fruit. They’re perfect warm with a generous helping of custard or eat them alongside your favourite cheese!

Austria - Linzer Torte
This is one I'll definitely be making again! So delicious. A perfect short and crumbly hazelnut pastry spiced with cinnamon, ginger and lemon. Filled with raspberry jam and topped with demerara sugar for that extra crunch
